It starts with corn, not flour.
Our tortillas are made the way they have been for three thousand years. No bags, no shortcuts: heirloom corn, lime, water and a hot comal.
Nixtamal
Heirloom corn from Oaxaca simmers overnight with cal (lime) to soften the skins and wake up the flavour.
Molino
The corn is stone-ground every morning into fresh masa. You can smell it from the street.
Comal
Each tortilla is pressed to order and puffed on the comal, then straight into your taco.
